This special blend of Chardonnay and Pinot Noir is only made in exceptional years from selected terroirs of old vines with limited production. These grapes are chosen for their ability to attain, after the vinification, blending, and aging, a remarkable fullness and complexity that express the year’s special character. Its bright yellow robe is full of extremely fine bubbles. The nose is full of gourmet aromas while the smooth, fleshy mouth gives it a long finish. It is worthy of being on well reputed tables during holiday celebrations!

Viticulture: Contact products, no chemical herbicides, regular ploughing.

Training/ Pruning: High vines in double guyot, low vines in simple guyot.

Vines age: 50 – 60 years.

Harvest: By hand in 20 kg baskets. Strict selection over the sorting table.

Pressing: Entire grapes are insert in a pneumatic press of 3500 kg.

Vinification: Alcoholic and malo-lactic fermentation in stainless stil tanks. Filtration with Kieselguhr. Home made liquor.

Aging on lees: 36 – 48 months.

Riddling: By hand in “pupitres” (oak desks).

Disgorging: At least 45 days before sale. Dosage: BRUT – 7 g/ L.

Wine Alcohol.: 12%/ vol.

Keeping: 8 years.

Storing temperature : 12° to 16°C.

Serving temperature: 5° to 8° C.
